Quick Lockdown Lunches for the whole family

Ok so I know that lockdown is hopefully going to end in the UK in the next few weeks but here’s some super quick and easy lockdown lunches to tide you over! What’s more, these are perfect for Spring Summer which is just around the corner! Woo hoo, bring them on!! 👏🏼

Although these ideas are sure to go down well with the kids, they are totally delicious and perfect for everyone!

1. Sausage Pasta

This is one dish that the family will never grow tired of, but to make it super quick, why not replace the sausage with salami, tofu or other cooked protein  – seeing as the pasta cooks in 10 mins, the plate should be on the table in 15 minutes. Also you could play around with the pasta – try pappardelle instead of the usual spaghetti, or even orzo!

2. Goats Cheese and Avocado Crackers

These delicious little morsels will be gone before you know it! Guacamole might go down better with the kids but it’s still a winner! How can you resist soft, smooth slices of avocado, the tangy cuts of tomato and the creamy gooey goats cheese? A twist of black pepper, and you’re good to go!

3. Pea Soup with Croutons

Soup has always been a favourite in our house. Peas take no time to blitz up into a soup with some crème fraîche and a little truffle oil – add some croutons for that all important crunch and then garnish with anything you like – pumpkin seeds, chilli, ham hock…there are no rules! 4. Toasted Wraps

Toasted tortilla wraps are so delicious and are done in minutes – my kids like ham and cheese but really there is so much that can go in one of these – I think I’ll have cheese and chilli!

5. Potato, beans and cheese!

Baked potatoes are fab but they do take a while – how about mini pots with a base layer of mashed potato, topped with baked beans or spaghetti hoops and then with some grated cheese! You can even add an egg on top or whatever you fancy – ready in no time! Yum!
