So how do you make one of the most popular types of bread even better?

By adding chocolate of course! Oh and what if you want to elevate it even further? Well, obviously by adding more chocolate!!

So you know where I am going with the chocolate, but you know what will make it sing louder? You got it – let’s throw some spices into the mix – you know a pinch of cinnamon, a splash of ginger, even a smidgeon of clove! Layer those spices and you will have a banana bread recipe you come back to time after time.

Working out the spice/chocolate pairings was so much fun and this bread certainly packs a punch – but that’s what we need sometimes. We need to just give it a go!

Triple Chocolate, Spiced Banana Bread

This banana bread really packs a punch with added chocolate and spices! You'll win the family over with this for sure!

Ingredients
  

  • 175 g plain flour
  • 40 grams cocoa powder
  • 1 1/2 tsp baking powder
  • 140 g brown caster sugar regular caster sugar can be used
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/8 tsp ground cloves
  • 125 ml vegetable oil
  • 4 medium over ripe bananas
  • 1 1/2 tsp vanilla extract
  • 2 medium eggs
  • 30 ml milk
  • 50 g white chocolate chips
  • 50 g dark or milk chocolate chips

Instructions
 

  • Pre heat the oven to 180C (160C fan) and grease/line your 9 x 5 inch loaf tin, with baking parchment.
  • Sift the flour, cocoa and baking powder into a large bowl and then add the sugar, salt and spices. Mix together.
  • In another bowl, peel and mash three of the bananas together and then add the eggs, oil and vanilla extract. Mix together. Add the white, and dark chocolate chips
  • Add the wet ingredients to the dry ingredients and gently, fold the mixture using a wooden spatula until just combined. Add the chocolate chips (holding a few back to sprinkle on top) and again fold gently through.
  • Pour the batter into the loaf tin. Top with one banana, sliced in half. Then sprinkle the remaining chocolate chips on top.
  • Bake for approximately 55 – 65 mins or until a skewer inserted into the middle, comes out clean.
  • Leave to cool for 5 minutes, before turning onto a wire rack and leaving to cool completely.
